The structure of the vegetable pulp is like a “sponge” and absorbs a lot of oil in which it is fried. If you are on a diet or watching your weight, there are several ways to fry eggplants to make them more dietary.

The first option is to fry the pieces after breading them in batter, which will close the pores of the vegetable pulp. The batter can be the following: beaten eggs, eggs with flour, eggs with breadcrumbs, eggs with grated cheese or any other. The second is to bake the slices in the oven, then a minimal amount of oil will be required, just to lubricate the baking sheet.


Ingredients:

  • Eggplants – 2 pcs.
  • Cottage cheese – 300 grams
  • Refined vegetable oil - for frying or baking
  • Garlic – 2 cloves
  • Mayonnaise – 10-30 ml
  • Salt - to taste
  • Greens - a couple of sprigs

Preparing fried eggplants

Wash the vegetable, cut off the ends and cut into long slices about 5-7 mm thick.

Note: if you feel bitterness in this vegetable, then to get rid of it you need to soak the fruits. To do this, place the slices in salted water for 10-20 minutes. Ratio of water and salt: per 1 liter 1 tbsp. Then drain the water and dry the pieces well with a paper towel.

If you do this in a frying pan, pour oil into it and heat it. Fry the vegetable on both sides over medium heat. Determine the degree of browning yourself. If you like them more ruddy, keep them on the fire longer, if you prefer them with a light golden color, less. You can also use any batter if you wish.

Having chosen a baking sheet for frying, grease it with a thin layer of oil and place the vegetable slices. Place it in a preheated oven at 180°C for 20 minutes. After 10 minutes, turn the pieces over to the other side.

Season the finished eggplant “tongues” with salt and garlic passed through a press.

Pour mayonnaise over them. Determine its quantity yourself according to your taste. But you shouldn’t get carried away with it, because... it increases calories.

At this stage, the fried eggplants with garlic are ready and can be consumed. But to make them even tastier, I suggest making them with curd filling. To do this, place the cottage cheese in a bowl, add a little salt and finely chopped herbs. Stir. Use any greens: dill, cilantro, parsley, basal...

Place a tablespoon of cottage cheese on one edge of the eggplant slice, compact the filling a little and roll the vegetable into a roll.

Place the rolls on a serving plate and serve.

Tip: for such snacks, buy young eggplants. They have few seeds and are covered with a thin skin. Their skin should be dark blue with a shiny tint. The tail is fresh, not dried out. The surface is without scratches, abrasions and not wrinkled.
